Project description | Interviews, 2007-ongoing, focus on issues related to Latin American immigration to North Carolina and the formation of Latino communities. Interviewers are conducted by undergraduate students in courses taught by Hannah Gill at the University of North Carolina at Chapel Hill. Interviewees include immigrants, United States-born second generations, professionals who work with immigrants, policy-makers, religious leaders, educators, students, and local business owners. |

Abstract | Enrique Chaupiz discusses his roots in the context of Peruvian food. He talks about the traditions his mother has passed on and how he has tried to conserve the Peruvian cuisine in his household ever since he moved to the United States. He narrates some of his childhood memories and explains how his passion for cooking was born. Mr. Chaupiz talks about what components make up a special and delicious meal. He also explains how the Peruvian cuisine has been influenced by cultures such as Chinese, Japanese, Spanish, African, and Indigenous (Los Incas) by giving diverse examples of some traditional dishes. He talks about his favorite dish and the preparation process it takes to make it. He also explains how he has had to modify some of the ingredients ever since moving to the United States and how the Peruvian market has increased drastically over the past 28 years. Throughout the interview, Mr. Chaupiz shows his Peruvian pride and love for his country, culture and especially for Peruvian cuisine. |
